White chocolate strawberry cupcakes
made May 5, 2010
These were really good! The cream cheese frosting with the fresh strawberries on top was delicious, not to
mention white chocolate
chips throughout the
cake. They were
again fairly easy
to make, and really good!

Choc-n-Cherry Cupcakes
Made on May 23, 2010

These cakes were pretty good even though
I changed a few things around: the recipe
called for cherry liqueur but I couldn't get
that so I just used cherry flavoring. They
turned out well that way. The recipe also
didn't specify which type of cherries to use
to I went for dark sweet cherries. The
cream frosting was pretty good too.
They sure looked fancy when they
were finished because of the shaved
chocolate on top.

Classic chocolate buttercream cupcakes
Made 05-12-10
These cakes were so simple.
Not to sweet, just the perfect amount.
What you grandma would make you scratch

Jelly Donut Cupcakes
Made on 05-15-10

Very Messy to Eat=
These were so freaking delicious
I can't even explain! I hollowed out
a whole in the top and then dropped
the jelly in and replaced the top
then put the frosting on. The book said
to cut the tops off put a drop of jelly
then replace the top but my way
was actually a lot cleaner and that way
they were filled. Yum-O!

Lots of cakes to report. I've been busy but mot to busy to keep baking. I'm officially done with classes so I've got a lot more time to do a lot more cupcakes! There are so many though, I know a few that I'm saving back for special occasions such as holidays. Can't wait to try some...which ones should I do next? Little Carmel Cupcakes, Strawberries and Cream Cupcakes?Carnation Cupcakes or maybe a muffin. Feel free to be a taste tester if your in the area ! Just shoot me a message.

G.I. Carrot Cupcakes.
Made on 05-05-10.
These Cakes were okay to me. It may have been because I had a hard time baking them. First, they included a LOT of
ingredients, shredded carrots (which is quite frankly a bitch to do by hand, which I did), and to top it off I dropped a whole dozen eggs on the ground in the process of getting things from the fridge. When I did eventually get them baked I thought they were extremely heavy. They didn't taste like your typical carrot cakes, sweet with cream cheese frosting, they were hearty. One thing I would say is they would be good for health gurus
or extreme camping trips!

Pineapple Upside-down Cupcakes
These were super yum! They were also pretty simple.
I added a little maraschino cherry in with the pineapple
at the bottom because that's how I like pineapple
upside-down cake. The bottoms did kinda stick into the pan but it was okay, I just scooped them back on and they were great. You would have to eat them with a spoon anyways.

Cupcakes 3,4, and 5!

I'm late updating this week but I managed to make three different cakes! They were all of course delicious. I think most of the cupcakes in this book are fairly simple to make!! I'm also noticing that the recipes are making more than what it says it will. Most say they make a
dozen or a dozen and a half but I'm finding them to make at least a half dozen or a dozen more than suggested. Although no one is complaining :) Maybe I should buy some bigger pans, then there would be giant cakes!

Cupcake #3
Date and Pecan Muffins
These were really good. Especially for a breakfast muffin! I didn't really think I would like dates in it that much but they are pretty good! I thought this was a very heavy muffin and kind of dry, but still good!

Cupcake #4
Baked Cheesecakes

Can you say yum? Of course I'm a cheesecake lover so I thought these were delicious! And so cute because they are mini! I substituted blackberries
on them instead of the blueberries the recipe suggested, I didn't see any nice looking fresh blueberries at the time and the blackberries were perfect! I tried some chocolate syrup on a couple as well: chocolate+cheesecake=yummychumz
Cupcake #5

These were awesome as well! Although there was no oatmeal in it, to me it they tasted just like Banana Oatmeal cookies. The honey made them extra sweet they were also a great breakfast muffin. They baked up moist and fluffy, but I thought there were too many walnuts. Either way, they were good.

New cuppycakes coming tomorrow... I haven't decided which kind to make this week. Maybe I'll try and make three different kinds to keep going at a good rate! Any suggestions? There's all different flavors and kinda so most likely you can pick one of them. Mint Chocolate Chip? Something strawberry? Something simple vanilla or a corn muffin? Perhaps I'll get one of the heartier cakes a try...

Cupcake #2 Chocolate Mud Cakes

These cakes were super easy to make, didn't take much sugar, or flour and tasted great! I liked them because they weren't super sweet but just sweet enough. Oh yeah, chocolate makes them good just by being chocolate alone! So I'm confident I can get all of my 500 cupcakes done within two years if I keep goin at this rate :)

First of all...

My name is Katey. I'm nineteen years old and I really like to bake. I'd have to I've had a passion for it ever since I was young, and I'm pretty good at it. My mom got me the book "500 Cupcakes" by Fergal Connolly this Easter as I small gift and I am ambitious enough to take it on. I am giving myself 2 years to complete this book. Taking on every recipe (and maybe even some of the additional variation recipes) within 2 years of yesterday April 21, 2010, the day of my first cupcakes.

CUPCAKES #1...Eggy Cupcakes

First of all, these were delicious! They reminded me of "Lazy man pie" a dish my mom and grandma have made with peaches. I chose to do these cupcakes first because I thought they were hilarious! They look just like sunny side up eggs! I can tell that all the cupcakes out of this book are going to be delicious because I think they all have the same basic ingredients. I can't wait for the next recipe, as I'm sure my friends and family can't either!
